The Cihuatán valley’s closely guarded secrets and legends are now revealed through our aged rum to those curious spirits with a thirst to explore. The name "Indigo" was inspired by the color blue, which was crafted by the ancient Maya using the Indigo flower (anil). Cihuatán Indigo presents tasting notes such as Vanilla, Cappuccino, Dark Chocolate, Lemongrass, Hazelnut and Artisanal Dulce de Leche, and it can be enjoyed neat, with a mixer or in a cocktail, it is very versatile and easy to mix. Mix 50ml Cihuatán Indigo Rum, 10ml lemon juice, and 25ml cranberry juice and top up with 70ml Prosecco. Therefore the teams control the quality of their products, from the harvest of sugar cane to bottling, including distillation and aging.

This rum is aged according to the Solera method, in American oak barrels that have contained bourbon The youngest eaux-de-vie are at least 8 years old. Distilled from molasses using a column still, it has a pleasant aroma of biscuits, hazelnuts, sweetness, and vanilla.Cihuatán’s great strength is that master distiller and blender Gabriela Ayla is able to oversee the entire Rum distilling process, from sugarcane seed selection to bottling.

Aged for 8 years in ex American Oak Bourbon barrels which has produced a rum that has some rich Vanilla notes with hints of Coffee and Dark Chocolate. The palate is host to a packed bill of flavours, from dark chocolate, lemongrass, with hazelnuts to artisanal Dulce de Leche - divine! A less complex body and a shorter tail are balanced by a pleasant sweet taste that will satisfy even less demanding rum drinkers. The speciality of this human and artisanal distillery, also resides in its self sufficiency since, in addition to the sugar and molasses it produces, it generates its own electricity from bagasse, the fibrous residue of sugar cane.
