About this deal

Change up the dried fruit by using raisins, dates, or apricots. If the dried fruit is big, chop it up into smaller chunks. Score the brie: Using a serrated knife, make parallel cuts across the top rind, spacing them about ½ inch apart, and cutting just through rind but not through the cheese. Then, turn the brie 90 degrees and score perpendicular to your initial set of cuts, keeping the same ½-inch spacing. This process creates a crosshatch pattern on the top of the cheese. Be mindful of the depth of your cuts—the aim is to penetrate just the rind, as cutting too deeply could cause the brie to lose its shape and structure during baking.

This recipe is better served warm with some flavorsome add-ons such as fresh herbs, sweet strawberry or raspberry jam, syrup, toasted nuts, and berries.

So it would be helpful to have instructions and timings for real French Brie as well, because who wants to miss out on all that molten loveliness just because they live near — or actually in — France and only get the triangular kind in their shops? Not me! Step 4– Bake the brie in pie crust until the top is shiny and golden and the cheese is nice and melty. Baked Brie in Pie Crust with Brown Sugar – Top the pie crust with a sprinkle of light or dark brown sugar before you add the cheese and bake. This adds a warm, caramel-y sweetness.

Fresh sage. Fresh thyme or rosemary will also work. Fresh herbs like thyme or rosemary are also good options. If you are using homemade sauce or leftover cranberry sauce, skip to step 3. If using canned sauce, add it to a medium bowl with the sugars (some canned sauces are still quite tart and you will appreciate the optional granulated sugar), orange zest, cinnamon, vanilla, allspice, and stir to combine; set aside. Note – you will not use all of the sauce for this recipe and will have some leftover for another use.I used fresh thyme, however, if you're unable to find fresh thyme or don't have any, dried thyme will work just fine. You'd only need ¼ teaspoon if using dried thyme. Brie – You can use a 16 ounce wheel of brie or an 8 ounce wheel of brie. The large wheel of brie will not fit completely into the pie crust, but it will still work just fine! Pie Crust – Make sure you’re using a flat refrigerated sheet of pie crust. Not the frozen kind already in the tin. I use Pillsbury that can generally be found in the refrigerated section next to the biscuits.

Step 3– Line a rimmed baking sheet with parchment paper, then place the brie, pleat-side down, onto the baking sheet. In a small dish, whisk together water and egg until combined, then brush that over the top of the pie crust. You only need brie to make baked brie.
